Italian Spumante..One is Not Enough..

Where is it written that a meal can not include more than one Spumante?  I recently attended a dinner and our hosts served a bright, bubbly Spumante with the appetizer and the rest of the meal consisted of two other white wines..which complemented the dishes well..however..a special occasion ..or an occasion that you want to bring a festive feel to can include more than one Spumante..

Welcome your guests and open your meal with a Prosecco di Conegliano or Valdobbiadene served with appetizers of  cubes of Parmigiano-Reggiano cheese, salami, small quiche type tarts..

This is a versatile Spumante and is a grand match for dishes with vegetables, fish, white meats, or shellfish. 

When it comes to the dessert course a Moscati D’Asti or Asti Docg makes a perfect companion to desserts like a Panettone or drier cake. For desserts containing fruits a Brachetto D’Acqui is a fine match or return to a Prosecco  and if you can find it the rare Prosecco di Valdobbiadene Superiore di Cartizze..superior match for puddings, creme brulee, panna cotta and pastries or biscotti…

For your Valentine’s day dinner choose a variety of 2 or 3 Spumante for your meal and let the ‘bubbles’ turn a quiet dinner into a festive one..

Suggested menu to go with your Spumante:

*Herbed cheese balls with drizzled honey

*Risotto al Mare (Seafoood Risotto) -use Spumante in the recipe

*Salmone al forno (Baked Salmon)

*Tiramisu in Coppa- version of Tiramisu made in individual serving glasses with fresh  ricotta, topped with dark chocolate shavings…
